Open Blue’s operation, located 12 kilometers off Panama’s Caribbean coast, utilizes fully submersible sea cages to cultivate Cobia (Rachycentron canadum) in a high-energy, deep-water environment. By leveraging the natural velocity of offshore currents, the system ensures a continuous exchange of water, which maintains high oxygen levels and prevents the accumulation of organic waste without the use of antibiotics, hormones, or pesticides. This offshore model effectively decouples finfish production from sensitive coastal ecosystems, producing a white-meat fish characterized by a firm, buttery texture and high Omega-3 content. The resulting product is highly valued by professional chefs for its culinary versatility and serves as a sustainable alternative to species traditionally sourced from wild-capture fisheries.
